Apple Biscuits
Whether it’s tea-time or me-time, it’s always a good time for one of these chewy apple biscuits.
Ingredients:
- 4 JOYA® apples, cubed
- ¼ cup (60ml) brown sugar
- ¼ cup (60ml) water
- Few drops vanilla essence
- 1 tsp (5ml) ground cinnamon
- 2 cups (500ml) cake flour
- 1 tsp (5ml) bicarbonate of soda
- 1 tsp (5ml) baking powder
- 2 eggs, whisked
- ¼ cup (60ml) melted butter or oil
- Apple slices, for garnish
Method:
- Preheat oven to 170°C.
- Put apples, sugar, water, vanilla and cinnamon in a pot.
- Cook for 15 minutes, or until reduced and sticky, then blitz until smooth. Set aside to cool.
- Combine flour, bicarb, baking powder, eggs and butter or oil in a bowl.
- Fold through apple mixture until combined.
- Taking two tablespoons at a time, roll batter into balls, place on greased baking tray and flatten.
- Place apple slices on top of each biscuit and bake for 10–12 minutes.
- Allow biscuits to cool before removing from baking tray. Serve.
